Asian Beef Soup

Ingredients:

  • 3 tbsp EVOO to cook

  • 1 tbsp salt

  • 1 tbsp pepper

  • 500 grams Beef Chuck (Karubi sliced) (1/8 inches sliced)

  • 3 tbsp finely chopped Ginger

  • 3 tbsp finely chopped garlic

  • 2 small red chillies, desseeded, finely chopped

  • 2 bunch Bokchoy

  • Bean Sprouts

  • Green Onions, finely chopped

  • Coriander

  • Leeks, thinly sliced

  • Soup Sauce:

    • 2 tbsp Coconut Aminos (or Light Soy Sauce)

    • 1 tbsp Sesame Oil

    • 2 tbsp brown sugar

    • 5 cups water, with 2 cubes dissolved Not-Beef Bouillon Cubes

Steps:

  1. On a hot large saucepan over medium high heat, add EVOO, garlic and ginger and chillies. Cook for 30 secs.

  2. Add beef to sear and season with salt and pepper for about 5 mins

  3. Add pre mixed soup sauce, cover and bring to boil for 45mins

  4. Separately, blanche the Bokchoy for 1-2mins and set aside

  5. Plate the Beef Soup and top with Bokchoy, Bean Sprouts, green onions, leeks and coriander
