Pan Seared Halibut with Lemon Caper Sauce
Ingredients
2 pcs 200g Halibut Fillet (Fishta Seafood)
4 tbsp butter, divided / melted
1 tbsp extra virgin olive oil
Salt and pepper to taste
2 slices of fresh lemon
2 tbsp chopped garlic
1/2 cup dry white wine (i.e Chardonnay)
2 tbsp lemon juice
3 tbsp capers, drained
Season Halibut with salt and pepper
Place 2 tbsp butter and 1 tbsp extra virgin olive oil in medium heat pan
Sear seasoned halibut for 3-5 mins total for both sides
Remove and set aside cooked halibut
Adjust pan heat to low
Add chopped garlic into pan and cook for 1 minute
Add 1/2 cup of dry white wine, and cook to evaporate (about 1 min or less)
Add lemon juice and capers for 1 minute
Add butter to stir (about 10 seconds)
Add fresh lemon into the pan
Add cooked halibut and turn back pan heat to medium
Use spoon to spoon sauce over top of halibut (about 30 secs)
