Pan Seared Halibut with Lemon Caper Sauce

Ingredients

  • 2 pcs 200g Halibut Fillet (Fishta Seafood)

  • 4 tbsp butter, divided / melted

  • 1 tbsp extra virgin olive oil

  • Salt and pepper to taste

  • 2 slices of fresh lemon

  • 2 tbsp chopped garlic

  • 1/2 cup dry white wine (i.e Chardonnay)

  • 2 tbsp lemon juice

  • 3 tbsp capers, drained

  1. Season Halibut with salt and pepper

  2. Place 2 tbsp butter and 1 tbsp extra virgin olive oil in medium heat pan

  3. Sear seasoned halibut for 3-5 mins total for both sides

  4. Remove and set aside cooked halibut

  5. Adjust pan heat to low

  6. Add chopped garlic into pan and cook for 1 minute

  7. Add 1/2 cup of dry white wine, and cook to evaporate (about 1 min or less)

  8. Add lemon juice and capers for 1 minute

  9. Add butter to stir (about 10 seconds)

  10. Add fresh lemon into the pan

  11. Add cooked halibut and turn back pan heat to medium

  12. Use spoon to spoon sauce over top of halibut (about 30 secs)
