Tuna Poke Bowl

There are those days when you just don’t have the time to cook! Bowls are perfect for a quick whip meal, minimal cooking skills required. Before you start, make sure you have cooked rice which you may have stored in the ref for several use.

Ingredients:

  • 2 cups of fresh tuna cubes (we love Wildcaught Tuna poke cubes)

  • Nori strips

  • 1 egg

  • 1/2 sliced avocado

  • 1 cup cooked brown rice

  • 2 cups chopped romaine lettuce

  • 1/4 cup light soy sauce

  • 1 tablespoon sesame oil

  • 2 tablespoons sesame seeds

  • salt and pepper to taste

  • 1/4 extra virgin olive oil

  • 3 tablespoons balsamic vinegar

Method:

  • Defrost the tuna cubes and place on bowl

  • On a separate bowl, poke mix sauce: light soy sauce and sesame oil

  • Pour poke sauce over tuna cubes evenly

  • Boil eggs, 7-8mins for soft boiled, or 10mins for hard boiled

  • Slice avocados for side

  • Build the bowl: cooked rice on bottom, tuna poke cubes on top, eggs, avocados and lettuce on the side

  • Sprinkle with nori strips and sesame seeds

  • Separately, make balsamic vinaigrette by combining EVOO and balsamic vinegar. Mix well.

  • Season sides with balsamic vinaigrette
