Soy Ginger Chicken Recipe

Craving for Chinese food take out? Try this hack to satisfy your asian flavor craving, without sacrificing eating a healthy meal. Soy, ginger and sesame oil, is always a winning combo for the makings of an Asian inspired dish.

Ingredients:

  • 500 grams skinless, boneless chicken breasts

  • 1/4 cup minced garlic

  • 1/4 cup minced ginger

  • 1/2 cup light soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon flour, divided in 3/4 cup water

  • salt and pepper to taste

  • 1 cucumber, thinly sliced

  • 1/4 cup chopped spring onions

  • 4 tablespoon extra virgin olive oil

  • 2 tablespoon sesame seeds

  • 2 cups of cooked black or brown rice

Method:

  • Cut chicken breasts into cubes, season with salt and pepper

  • Sear chicken breasts on olive oil, for about 6-8 mins or until golden brown

  • On a separate bowl, prepare the ginger mix. Mix garlic, ginger, light soy sauce, sesame oil, and divided flour (flour mixed and stirred in water), stir well

  • Pour the ginger mix evenly on top of chicken and continue stir frying for 1-2 minutes

  • Top off cooked dish with chopped spring onions and sesame seeds

  • Plate soy ginger chicken on top of black or brown rice

  • Place sliced cucumbers for side dish
